This pumpkin spice cake has just about everything going for it! It’s very easy, almost as easy as using a mix – you basically just mix the cake batter in one bowl! It has a cream cheese frosting. It’s quite low in calories. And it is really good!

This cake would make a very nice Thanksgiving Day dessert. But it’s so easy, you’ll want to make often.

Ingredients

    Cake
  • nonstick cooking spray
  • 1 cup all-purpose flour
  • 2/3 cup sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/8 teaspoon salt
  • 1/8 teaspoon ground cloves
  • 1 teaspoon ground cinnamon
  • 1 cup canned pumpkin
  • 2 slightly beaten egg whites
  • 1/4 cup canola oil
  • 1/4 cup water
  • 1/2 cup raisins
  • Cream Cheese Frosting
  • 1/4 cup (2 ounces) light cream cheese
  • 1-3/4 cups confectioners sugar
  • 1 teaspoon vanilla
  • 1/4 teaspoon grated lemon or orange peel

Instructions

    Cake
  1. Spray 11x7x1-1/2 inch pan with cooking spray; set pan aside Preheat oven to 350 degrees.
  2. In medium mixing bowl, combine flour, sugar, baking powder baking soda, salt, cloves, and cinnamon.
  3. Stir in the pumpkin, egg whites, canola oil, and water until thoroughly combined. Gently stir in the raisins.
  4. Spread batter into the prepared pan.
  5. Bake in 350 degree oven for 20 to 25 minutes. or until a wooden toothpick inserted near the center comes out clean.
  6. Cool in pan on a wire rack,
  7. When cool, frost with Cream Cheese Frosting.
  8. Cut into 24 bars.

  10. In a medium mixing bowl, beat together cream cheese, vanilla, and grated lemon or orange peel. Incorporate the confectioners sugar in two batches, beating after each addition.
