Broccoli Cheddar Soup

This classic broccoli cheddar soup is as flavorful as it is nutritious.

It’s as easy as can be, and freezes well.

Broccoli Cheddar Soup

This classic broccoli cheddar soup is as flavorful as it is nutritious.

It's as easy as can be, and freezes well.

Yields Makes about 2 quarts, 8 cups, or .5 12-ounce bowls.

Ingredients

  • 2 tablespoons olive oil
  • 4 cups diced (about 1-1/2" dice) potatoes
  • 2 large sweet onions, chopped
  • 4 cups vegetable broth
  • 4 cups broccoli florets
  • 2/3 cup Italian parsley, large stems removed
  • 6 ounces sharp cheddar
  • 1/2 teaspoon salt
  • Several grinds of fresh black pepper
  • 1/2 teaspoon paprika
  • 1/4 teaspoon nutmeg
  • For Garnish
  • 2 ounces blue cheese, crumbled
  • 1/3 cup Italian parsley, large stems removed

Instructions

  1. Heat the olive oil in a large stockpot over a low heat.
  2. Add potatoes and onions to pot; cook over medium heat, stirring constantly, for about 5 minutes. If the mixture starts to the bottom of the pot, add a bit of the vegetable broth.
  3. Add vegetable broth, broccoli, parsley, salt, pepper, paprika, and nutmeg to pot.
  4. Reduce heat to medium-low, and cook for about 20 minutes, until potatoes are tender.
  5. Add cheddar cheese to the pot, and stir until melted.
  6. Remove pot from stove. Using hand-held stick blender, puree the soup until smooth.
  7. Serve with blue cheese and parsley garnishes.

Notes

If you prefer a soup with a few chunks in it, then simply set aside some of the broccoli florets before you puree the soup. Then add them back in after the puree step. As a nice accompaniment for this soup, try this: Slice a loaf of French or ciabatta bread lengthwise. Spread with a little melted butter or margarine. Sprinkle with Parmesan cheese. Heat under broiler until lightly browned.
